Junior Mint Cheesecake

  1. Crust: Combine ingredients.
  2. Press in bottom and sides of a 9-inch springform pan.
  3. Filling: Place junior mints in freezer.
  4. Preheat oven to 350F.
  5. With electric mixer or in a food processer, combine cream cheese and sugar until smooth.
  6. Add eggs, one at a time, beating well after each addition.
  7. Stir in vanilla.
  8. Pour into crust.
  9. Chop cold junior mints and sprinkle onto cheesecake.
  10. Bake 40-45 minutes or until just set.
  11. Cool on wire rack, then chill several hours or overnight.
