Lemon and wholegrain mustard chicken
- 4 chicken breasts or legs
- 2 lemons juiced
- 3 tbsp wholegrain mustard
- 2 tbsp honey
- 1 tsp olive oil, extra virgin
- 1 pinch salt & pepper
- Juice your lemons and add the honey mustard oil and salt and pepper into a large bowl
- Score the chicken to allow the marinade to sink deep into the flesh.
- Add the chicken into the large bowl and cover thoroughly.
- Cover and refrigerate for 2 hours over night if possible but 2 hours works well for me.
- Heat up a large frying pan and add the chicken along with all the marinade keep the heat high for a couple of mins just to seal the outside of the chicken
- Turn down to a medium heat and cook for around 12 mins each side you will notice the marinade caramelises because of the sugars in the lemon juice yum.
- Serve with risotto or rice or whatever you see suitable
