Lemon and wholegrain mustard chicken

  1. Juice your lemons and add the honey mustard oil and salt and pepper into a large bowl
  2. Score the chicken to allow the marinade to sink deep into the flesh.
  3. Add the chicken into the large bowl and cover thoroughly.
  4. Cover and refrigerate for 2 hours over night if possible but 2 hours works well for me.
  5. Heat up a large frying pan and add the chicken along with all the marinade keep the heat high for a couple of mins just to seal the outside of the chicken
  6. Turn down to a medium heat and cook for around 12 mins each side you will notice the marinade caramelises because of the sugars in the lemon juice yum.
  7. Serve with risotto or rice or whatever you see suitable
