Nearly Zen

  1. Heat a medium saucepan over medium-high heat.
  2. Add onion, bell pepper, and garlic; saute 4 minutes.
  3. Add curry paste and red pepper to the veggies, mix and heat through, stirring constantly.
  4. Stir in broth and coconut milk; bring to a boil.
  5. Then reduce heat, and simmer, uncovered, 20 minutes, stirring occasionally.
  6. Add shrimp, cooking until shrimp are done (opaque).
  7. Stir in spinach and let rest until spinach wilts.
