Apple Harvest Cake
- 1 1/4 c. all-purpose flour
- 1 c. whole wheat flour
- 1 c. granulated sugar
- 3/4 c. packed brown sugar
- 1 Tbsp. ground cinnamon
- 2 tsp. baking powder
- 1 tsp. salt
- 1/2 tsp. baking soda
- 3/4 c. cooking oil
- 1 tsp. vanilla
- 3 eggs
- 2 c. finely chopped peeled apples
- 1 c. chopped pecans or walnuts
- Powdered Sugar Glaze (recipe follows) or whipped cream, sweetened
- Generously grease and flour a 10-inch Bundt cake pan; set aside.
- In a large mixing bowl, combine the flours, granulated sugar, brown sugar, cinnamon, baking powder, salt and baking soda. Add oil, vanilla and eggs; beat until well mixed.
- Stir in chopped apples and nuts.
- Spoon batter evenly into prepared pan.
