Vickys Autumn Stewed Plums

  1. Put the water, sugar, cinnamon stick and vanilla pod & seeds into a medium sized saucepan and simmer until the sugar has dissolved
  2. Carefully add in the chopped plums, bring to the boil then turn down and simmer for 10 minutes until softened
  3. Strain the liquid into another pan and boil / reduce until thick and syrupy, discarding the vanilla pod and cinnamon stick
  4. Stir the plums back into the syrup and serve with some plain yogurt
  5. You can also use this to replace the cherries in my brulee recipe
  6. This makes around 12 servings and can be frozen
