Lots of Onions Vichyssoise
- 300 grams Potatoes
- 1 Onion
- 20 grams Butter
- 500 ml Water
- 2 Consome stock cubes
- 200 ml Milk
- 100 ml Heavy cream
- 1 Salt and pepper
- 1 pinch Parsley (fresh or dry)
- Thinly slice the onion and potatoes.
- Melt butter in a pot and saute the onion until translucent.
- Be careful not to let it burn
- Add potatoes and ingredients and saute until the potatoes are soft.
- The potatoes are ready when they break easily when stirred with a spatula.
- Cool and puree in a blender and return to the pot.
- Add ingredients and season with salt and pepper.
- When it's cooled, chill in the refrigerator.
