Lots of Onions Vichyssoise

  1. Thinly slice the onion and potatoes.
  2. Melt butter in a pot and saute the onion until translucent.
  3. Be careful not to let it burn
  4. Add potatoes and ingredients and saute until the potatoes are soft.
  5. The potatoes are ready when they break easily when stirred with a spatula.
  6. Cool and puree in a blender and return to the pot.
  7. Add ingredients and season with salt and pepper.
  8. When it's cooled, chill in the refrigerator.
