Tomato and Green Pepper Salad

  1. Remove rind from preserved lemons.
  2. Julienne rind and discard the rest of the lemon.
  3. In a large bowl combine all the ingredients, including lemon rind, and allow to marinate for an hour.
  4. Check seasoning.
  5. Serve at room temperature

preserved lemons, tomatoes, green cubanero peppers, garlic, ground cumin, lemon juice, tomato juice, parsley, salt
