Creamy Green Bean Salad
- 1 cup green beans, cut in 2" pieces
- 1/2 cucumber, cut in strips
- 1/3 cup julienned red pepper
- 1/4 cup sliced onion
- 2 tbsp cream cheese
- 1 tbsp 2% milk
- 1 tbsp tarragon vinegar
- 2 tsp sugar
- 1/4 tsp salt
- 1/4 tsp pepper
- cook green beans til crisp tender
- drain and rinse beans in cold water
- in a bowl, whisk cream cheese and milk til fluffy, beat in vinegar, sugar, salt and pepper
- in a large bowl combine beans, cucumber, onion, and pepper, toss with dressing
- chill
