Carrot Drop Cookies

  1. Cream shortening and sugar until fluffly.
  2. Add egg, vanilla and lemon extracts and combine.
  3. Add carrots and mix.
  4. Combine flour, baking powder and salt.
  5. Mix into carrot mixture.
  6. Drop by spoonfuls on baking sheet.
  7. Flatten.
  8. Bake at 375 for 10-12 minutes.
  9. Frosting:.
  10. Combine powdered sugar, butter and orange rind.
  11. Add orange juice til spreading consistency.
  12. Spread on cooled but still warm cookies.
