Baked Potato Boats Recipe

  1. *Preheat the oven to 200 C, 400 F, Gas Mark 6.
  2. *Wash and prick the potatoes with a fork.
  3. Place on a baking tray on the centre oven shelf for approximately 1 hour, till cooked.
  4. *Place the bacon on a baking tray and bake in the oven below the potatoes for 8-10 min till golden brown.
  5. Cut into small pcs.
  6. Place in a bowl with the cheese.
  7. *When the potatoes are cooked, cut them in half lengthways.
  8. Scoop out the potato flesh from 2 potatoes into the bowl with the bacon and cheese.
  9. Take care as the steam from the potatoes is warm.
  10. Spoon the filling back into the potato skins.
  11. *Place on a baking tray and return to the oven for a further 15 min till golden brown.
  12. Heat the beans and spoon onto the serving plate.
  13. Place the potato halves on top and make sails by fixing a leaf on top of each potato with a cocktail stick.
  14. NOTES : A delicious and fun way of serving potatoes with a tasty savoury filling.
