Apricot Cranberry Muffins Recipe
- 1 3/4 c. reduced fat Bisquick(r)
- 3/4 c. fat-free (skim) lowfat milk
- 1/2 c. sugar
- 1/3 c. dry apricots minced
- 1/3 c. dry cranberries
- 1/4 c. fat-free cholesterol-free egg products or possibly 2 Large eggs
- 1 Tbsp. butter or possibly margarine melted
- 1/2 tsp grnd nutmeg
- 1/2 tsp grnd cinnamon
- Heat oven to 400 degrees.
- Place paper baking c. in each of 12 regular-size muffin c.. Stir all ingredients just till moistened.
- Divide batter proportionately among muffin c.. Bake 13 to 18 min or possibly till golden.
- Cold slightly; remove from pan.
- Yields: 12 muffins
- High Altitude (3500-6500 ft): Heat oven to 425 degrees
