Angel Hair Pasta With Shrimp Poblano And Serrano Chile Recipe
- 12 ounce angel hair pasta
- 3 Tbsp. extra virgin olive oil
- 2 x cloves garlic, chopped
- 1 Tbsp. minced fresh parsley
- 1 lrg pimento or possibly red bell pepper, minced
- 1 x poblano chile, roast, peel, seeded & minced
- 1 x serrano chile, seeded and minced
- 1/4 c. sliced black olives
- 1/2 tsp freshly grnd black pepper
- 1/2 lb small to medium shrimp, peeled, deveined, and cooked Minced fresh basil leaves freshly grated Romano or possibly Parmesan cheese
- Cook the pasta according to package directions.
- While it is cooking, heat the extra virgin olive oil, stir in the garlic, parsley, and pimento, and saute/fry for 3 to 4 min.
- Stir in the poblano and serrano chiles, olives, black pepper, and shrimp, and cook till the shrimp are hot.
- Drain the pasta, spoon the shrimp sauce over it, toss, and serve with minced fresh basil or possibly freshly grated Romano or possibly Parmesan cheese, if you like.
- SERVING SUGGESTIONS: This pasta makes a wonderful first course or possibly a great main dish served with sliced, toasted bolillos.
