Breakfast Kutia Recipe
- 2 c. Wheatberries whole kernels
- 3 quart Water
- 1 c. Poppy seeds
- 1/2 c. Minced walnuts or possibly almonds
- 1 x Apple, peeled, cored, diced
- 1/3 c. Honey
- 1 c. Sugar
- This is the ritual first dish of the Polish and Ukrainian 12 course meatless Christmas Eve Supper.
- The wheat represents the staff of life, the honey represents the Spirit of Christ.
- I find which it also makes an excellent breakfast porridge anytime.
- Two days before:Rinse and soak wheat overnight in cool water.
- One day before:Bring wheat to a boil, simmer for 3-6 hours., till the wheat kernels start to burst.
- Drain and cold.
- Wash the poppy-seeds thoroughly in cool water, scald with boiling water and drain.
- A coffee filter set into a small sieve is good.
- Pour boiling water over them, bring to a boil, remove from the heat and drain again.
- Keep in a cold place till used.
- Which morning:Dissolve the honey in a little scalding warm water.
- Cold.
- Mix together the wheat, poppy seeds, honey, minced nuts and apples.
- Serve cool.
- Options: Add in 1/3 c. raisins or possibly currants, minced dry peaches, dates or possibly figs or possibly other dry fruit such as cherries.
