Gluten free Blintzes
- 3/4 cup Gluten free flour
- 1 cup milk
- 1 egg
- 2 tsp vanilla
- 1 tbsp powdered sugar
- 1/3 cup Jam or preserves
- 1 tbsp boiling water
- 1 Philadelphia whipped cream cheese
- In a large measuring cup with a handle, pour in milk
- Add egg, vanilla and powdered sugar and mix well.
- Whisk in flour until smooth.
- Grease a large flat griddle and pour out 1/3 cup of batter.
- When steam rises from the crepe, gently lift edges before flipping.
- Crepes should be slightly golden on each side.
- In microwave safe bowl, put in jam and add boiling water.
- Stir water and jam then microwave for 30 seconds
- Spread cream cheese on each crepe and roll up.
- Top with warm jam.
