Minted Pineapple Gin Blossom

  1. In a tall glass filled with ice, combine gin and pineapple juice and fill the glass with the seltzer.
  2. Bruise 1 or 2 mint leaves from the sprig of mint; stir them into the drink.
  3. Garnish with the remaining mint sprig.
