Grandpa's Stuffed Eggplant Recipe

  1. Preheat oven to 350 degrees.
  2. Halve the eggplant lengthwise.
  3. Scoop out pulp, leaving the shell intact.
  4. Dice eggplant pulp, and combine with onions, garlic and pepper.
  5. Saute/fry in a large saucepan over moderate heat for 5 min.
  6. Stuff mix into shells and sprinkle with Parmesan cheese and or possibly blend crumbs.
  7. Bake 25 min.
  8. Serve warm or possibly cool.
