Stir Fried Scallops and Snow Peas
- 1 tablespoon dry sherry
- 2 teaspoons soy sauce
- 1 teaspoon sesame oil
- 12 teaspoon sugar
- 12 lb bay scallop
- 2 teaspoons cornstarch
- 14 teaspoon salt
- 1 tablespoon peanut oil
- 1 tablespoon minced fresh ginger
- 3 ounces snow peas, trimmed
- 3 scallions, cut into 1 inch lengths
- In a small bowl combine sherry with soy sauce, sesame oil, sugar and 1 tablespoon water.
- Whisk until sugar is dissolved.
- Set aside.
- In a small bowl sprinkle scallops with cornstarch and salt.
- Toss to coat.
- In a large skillet, heat oil.
- Add scallops and stir fry until golden, 1 minute.
- Add ginger, snow peas, and scallions and stir fry until snow peas are bright green, 1 minute.
- Reduce heat to medium low.
- Add reserved sauce and cook, stirring until sauce thickens and scallops and vegetables are well coated.
