Bulgur Pilaf With Dates, Dried Apricots, And Toasted Walnut Recipe
- 2 Tbsp. extra virgin olive oil
- 1 c. minced onion
- 2 x garlic cloves chopped
- 2 c. coarse or possibly medium bulgur (available at natural foods stores and supermarkets)
- 1/2 c. minced pitted dates
- 1/2 c. minced dry apricots
- 1 x cinnamon stick broken in half
- 2 tsp curry pwdr
- 2 can low-salt chicken broth - (14 ounce ea)
- 1/2 c. minced green onions
- 1/2 c. coarsely-minced walnuts toasted
- Heat oil in heavy large saucepan over medium heat.
- Add in onion and saute/fry till golden brown, about 5 min.
- Add in garlic; stir 1 minute.
- Add in bulgur and saute/fry 5 min.
- Stir in dates, apricots, cinnamon stick, and curry pwdr.
- Add in broth; bring to boil.
- Reduce heat to medium-low; cover and simmer till bulgur is tender and broth is absorbed, about 15 min.
- Stir in green onions.
- Season to taste with salt and pepper.
- Transfer pilaf to bowl.
- Sprinkle with walnuts and serve.
- This recipe yields 8 side-dish servings.
