Faye's Jam Cake
- 5 eggs, separated
- 1 cup sugar
- 1 cup butter
- 1 tablespoon baking soda
- 1 tablespoon cinnamon
- 3 cups flour
- 1 cup blackberry jam
- 1 cup strawberry jam
- 1 cup raisins
- 1 cup buttermilk
- 1 tablespoon allspice
- 1 cup grated nutmeats
- Cream butter and sugar; add jam and preserves.
- Add the well beaten egg yolks and beat until smooth.
- Add flour and milk, to which soda has been added, alternately and mix well after each addition.
- Add spices and nuts and mix well.
- Fold in the egg whites, which have been beaten until stiff.
- Pour into 3 well greased 9" layer pans and bake in a 400 degree oven for 40 to 50 minutes or until done.
- Frost with carmel frosting.
