Tuna Salad for Two
- 2 cups torn lettuce
- 1 pkg. (5 oz.) corkscrew macaroni, cooked and drained
- 1 can (6-1/8 oz.) tuna, drained
- 1 md. tomato, cut into wedges
- 1 celery rib, sliced
- 1 carrot, peeled and sliced
- 1 sm. cucumber, sliced
- 1/4 cup green pepper strips
- 1 cup broccoli florets
- 1/2 cup provolone
- mozzarella cheese, julienned
- 1/4 cup olive oil
- 1 tbsp. lemon juice
- 1 sm. clove garlic, minced
- 1-1/2 tsp. white wine vinegar
- 3/4 tsp. Italian seasoning
- 1/4 tsp. salt
- 1/8 tsp. pepper
- On two salad plates, arrange the first 10 ingredients in order listed.
- In a jar with tight-fitting lid, combine dressing ingredients; shake well.
- Pour over salads and serve immediately.
