Ila's Pineapple Stuffed Date Sumaki
- 15 pitted dates
- 16 ounces pineapple chunks, drained (reserve juice)
- 15 slices bacon, cut in half (precooked or microwave)
- 12 cup tomato sauce
- 12 cup soy sauce
- 12 cup pineapple juice
- 14 cup brown sugar
- 2 garlic cloves, minced
- Preheat oven to 400 degrees.
- Cut each date in half crosswise, leaving a hole in the center.
- Lay a pineapple chuck into the center of each half slice of date and wrap with a half of a bacon slice.
- Sticking with a wooden tooth pick to hold together.
- Place in a 13 x 9 inch baking dish and cook for 30 minutes; drain excess fat.
- Combine remaining ingredients in a small bowl and pour over rumaki; tossing lightly to coat with sauce.
- Bake for 30 minutes more, stirring occasionally.
- Pour rumaki and sauce into a shallo decorative bowl.
- Serve hot.
