Garbanzo Salad Bean, with an Orange
- 8 cups chopped romaine lettuce
- 4 medium tomatoes, chopped
- 2 cup , cooked or canned
- 1/2 medium red onion, chopped
- 2 carrots, chopped
- 2 Tbsp. extra virgin olive oil
- 1/4 cup lemon juice
- 2 tsp. granulated sugar
- 1/2 cup PLANTERS Sunflower Kernels
- 8 breadsticks
- 4 medium oranges
- 32 fl oz (4 cups) fat-free milk
- Combine lettuce, tomatoes, beans, onions, and carrots in a large bowl.
- Blend olive oil, lemon juice and sugar in a small bowl.
- Season further as desired with your favorite salt-free seasoning; drizzle over salad and toss.
- Divide salad between 4 plates, and top each with 2 Tbsp.
- sunflower seeds.
- Enjoy with 2 breadsticks per serving.
- Complement each salad with 1 orange.
- Serve each person an 8 fl oz glass of milk with the meal.
