Chicken Stir-fried with Vegetables and Sun-dried Tomatoes

  1. Marinate chicken strips in 1 teaspoon of curry masala for 10 mins.
  2. Heat oil on medium heat.
  3. Add cumin seeds, cook 1 minute.
  4. Add sliced garlic and cook 1 minute.
  5. Add marinated chicken and cook 3 minutes - tossing and turning.
  6. Take chicken out and set aside.
  7. If necessary add a little olive oil to the same pan.
  8. Add onions, ginger, turmeric, 1 teaspoon curry masala.
  9. cook 2 minutes.
  10. Add green beans, mushrooms, sun-dried tomatoes cook 3 minutes add soy sauce and add 1/2 water and cook 2 minutes.
  11. Now add the chicken and prunes.
  12. Add remaining water if it is too dry.
  13. Cook on very low heat for 10 mins.
  14. Garnish with cilantro and serve hot.
