Chicken Stir-fried with Vegetables and Sun-dried Tomatoes
- 500 grams boneless chicken (Breast or Thighs) cut into strips
- 2 Tablespoons olive oil
- 1 teaspoon cumin seeds
- 1/2 onion, chopped fine
- 8-10 cloves fresh garlic, sliced
- 1 tablespoon chopped ginger (and turmeric if available)
- 2 teaspoon curry masala
- 2 Tablespoon sundried tomatoes
- 1 cup fresh or frozen green beans, cut
- 1 cup (canned mushrooms)
- 2 Sundried Prunes (Plums) sliced
- 2 tablespoon soy sauce
- 1 cup water
- Marinate chicken strips in 1 teaspoon of curry masala for 10 mins.
- Heat oil on medium heat.
- Add cumin seeds, cook 1 minute.
- Add sliced garlic and cook 1 minute.
- Add marinated chicken and cook 3 minutes - tossing and turning.
- Take chicken out and set aside.
- If necessary add a little olive oil to the same pan.
- Add onions, ginger, turmeric, 1 teaspoon curry masala.
- cook 2 minutes.
- Add green beans, mushrooms, sun-dried tomatoes cook 3 minutes add soy sauce and add 1/2 water and cook 2 minutes.
- Now add the chicken and prunes.
- Add remaining water if it is too dry.
- Cook on very low heat for 10 mins.
- Garnish with cilantro and serve hot.
