Greek Yogurt Breakfast Quiche
- 8 slices lean turkey bacon
- 4 whole eggs
- 4 egg whites
- 1 teaspoon mccormick italian seasoning
- 14 cup nonfat voskos Greek yogurt
- 13 cup thinly sliced yellow onion
- 3 small russet potatoes
- 12 teaspoon ground sea salt
- 14 teaspoon ground black pepper
- Prick and microwave potatoes for 5 minutes or until done.
- Cook bacon in large pan until crispy.
- Once removed blot bacon with paper towels to remove excess grease.
- Grill onions in bacon grease until browned.
- Peel potatoes, slice, and add to pan with onions.
- Cut turkey bacon into thin slices and add to pan.
- Whisk remaining ingredients in a bowl.
- Pour over turkey, potatoes, and onions.
- Reduce heat to medium-low and cover.
- Let set for up to 10 minutes.
