Test Recipe: Tofu and Bean Muffins

  1. put tofu and almond milk in blender or food processor.
  2. add vanilla, beans and egg white, blend till incoporated.
  3. pour in large mixing bowl.
  4. sift dry (minus coconut) into wet and fold till incorporated.
  5. spoon into muffin tin, greased.
  6. sprinkle with coconut.
  7. bake at 400 for 20 minutes.
