Spring Cabbage and Bacon Miso Soup

  1. Slice the onion thinly.
  2. Cut up the bacon into 1 cm wide pieces.
  3. Cut up the cabbage into 1 cm wide pieces.
  4. Put all the ingredients into a pan and add enough water to cover.
  5. Simmer until the cabbage is soft.
  6. Dissolve in some miso.
  7. Taste and adjust.
  8. Add the dashi stock granules at the end.
  9. A delicious miso soup with the umami of the bacon and the sweetness of spring cabbage!
