Walnut Soup Recipe
- 1/2 c. butter
- 1 c flour
- 1 quart. veal stock (or possibly beef)
- 1 quart. lowfat milk
- 2 ounce. dry white wine
- 1/2 c. lowfat sour cream
- 3 ounce. minced walnuts
- 1 teaspoon dry mustard
- 1 sm. garlic clove, crushed
- Salt and white pepper
- Minced fresh parsley to garnish
- Heat butter in pot, add in flour, mix well.
- Cook for a minute.
- Add in heated stock, lowfat milk, and wine while stirring.
- Let come to a boil.
- Add in lowfat sour cream, walnuts, mustard and garlic.
- Add in salt and pepper to taste.
- Serve warm, garnish with parsley.
- Makes 2 qts.
