California Beef Skillet

  1. Brown beef and onions in a large pot.
  2. Drain fat if necessary.
  3. Stir in water or stock, dry mustard, rice, and bouillon (if using).
  4. Bring to a boil, reduce to a simmer and cook covered for 25 to 45 minutes, or until liquid is absorbed and rice is soft.
  5. Stir in the tomatoes, pepper, and cheese cubes.
  6. Cover and let sit a few minutes to melt the cheese.
  7. Serve immediately.
