Carrot-Avocado Salad

  1. Preheat the oven to 450 degrees F. In a small bowl, whisk the olive oil, grapefruit juice, and coriander.
  2. On a baking sheet, toss the carrots with 3 tablespoons of the dressing.
  3. Spread the carrots in a single layer and roast for about 20 minutes, turning once, until golden and tender.
  4. Season with salt and pepper.
  5. Meanwhile, in a small bowl, mix the almonds, grapefruit zest, and parsley.
  6. Transfer the carrots to a platter along with the avocados.
