Stuffed Pork Chops (11 points)
- 4 Pork Chops (approx 4oz each)
- 1 Salt (to taste)
- 1 Black Pepper (to taste)
- 1 1/2 cup Bread Crumbs (baked)
- 1/2 cup Apples
- 1/2 cup Low-fat Cheddar Cheese
- 2 tbsp Raisins
- 2 tbsp Margarine (reduced calorie)
- 2 tbsp Orange Juice
- 1/4 tsp Ground Cinnamon
- Pre-heat oven to 350F.
- Cut a pocket in the pork chop along the fat side.
- Salt & pepper to taste.
- In a bowl toss together bread crumbs, apple, cheese, & raisins.
- In a separate bowl mix together melted margarine, orange juice, & cinnamon.
- Pour orange juice mixture over bread crumb mixture, stir gently.
- Lightly stuff pork chop with mixture.
- Place in a shallow pan or casserole dish.
- Bake for approx 30 minutes.
- Cover with foil and co.tinker baking until done.
