Southwest Chicken

  1. Flatten chicken to 1/2 inch thickness.
  2. Sprinkle with cumin and cayenne.
  3. In a large skillet, cook chicken in oil over medium heat for 4 to 5 minutes on each side or until juices run clear.
  4. Meanwhile, combine corn and salsa; spoon over chicken.
  5. Top with cheese and jalapenos.
  6. Cover and cook for 3 to 5 minutes.
  7. Top each chicken breast with sour cream.
