Spinach Jack Quesadillas

  1. Heat oven to 400F.
  2. Melt butter in a large skillet.
  3. Add onion, cook over medium heat, stirring occasionally until onions are softened (about 10 minutes).
  4. Add spinach and stir until heated through.
  5. Place 3 tortillas on a flat baking sheet (or use two sheets if one isn't big enough).
  6. Divide onion-spinach mixture evenly among tortillas.
  7. Sprinkle each with shredded cheese and spoon salsa over cheese.
  8. Top each round with remaining tortillas.
  9. Bake approximately 8-10 minutes or until heated through and tortillas are golden around the edges.
  10. Let stand 5 minutes before cutting each quesadilla into 6 wedges.
  11. Serve immediately.
