Banana Oat (Cherrios) Muffins
- 2 cups Cheerios toasted oat cereal
- 12 cup whole wheat flour
- 34 cup flour
- 13 cup brown sugar, packed
- 1 teaspoon baking powder
- 34 teaspoon baking soda
- 1 cup banana, mashed (2 or 3)
- 23 cup nonfat milk (skim)
- 3 tablespoons vegetable oil
- 2 tablespoons egg substitute
- heat oven to 400F.
- spray 12 muffin cups with cooking spray.
- crush cereal.
- combine dry ingredients in a large bowl.
- stir in remaining ingredients until moistened.
- pour batter into muffin cups and bake 18-22 minutes or until brown.
