Ricotta & Pineapple Stack

  1. Chop four pineapple slices into 1/4 cubes and place in a bowl; add Ricotta, Mascarpone, granulated sugar and candied ginger, stir until combined.
  2. Place each slice of pineapple on individual serving plates; top with a large tablespoonful of mixture and top with equally with shredded coconut.
  3. Garnish with slices of fresh starfruit if desired Makes 4 servings
