Red Pesto Chicken and Artichokes
- 1 lb diced chicken breast
- 1 (15 ounce) can diced tomatoes with green pepper and onion
- 12 cup sun-dried tomato pesto
- 1 (15 ounce) can artichoke hearts
- Cook chicken pieces over medium heat and remove from pan.
- Add diced tomatoes to pan and scrape up any brown bits.
- Add pesto and artichokes and add back chicken.
- Heat through.
- Serve over rice or pasta.
