Sig's Raisin and chocolate chip cake
- 300 grams raisins
- 150 grams currants
- 1 cup dark rum
- 250 grams butter
- 200 grams sugar
- 1 tsp grated lemon rind
- 1 tsp cinnamon
- 1 large pinch nutmeg
- 80 grams chopped almonds
- 750 grams plain four
- 2 packages ( sachet )baking powder
- 1/2 liter milk
- 75 grams chocolate chip
- 6 egg
- 1 stick butter or fat for greasing tin
- 1 small amount of icing sugar for dusting
- mix all ingredients until dough becomes slightly foamy.
- preheat oven to 220C , grease the tin ,add mixture to funnel cake tin or similar baking tin with hole in middle and bake for about one hour, or until a skewer inserted comes away clean.
- Dust with icing sugar when cooled.
