Banana Bread
- 1 1/2 c. all-purpose flour
- 1 1/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/8 tsp. salt
- 2 slightly beaten egg whites
- 1 c. mashed banana
- 3/4 c. sugar
- 1/4 c. cooking oil
- nonstick spray coating
- In a medium mixing bowl, stir together flour, baking powder, baking soda, cinnamon and salt.
- In a large mixing bowl, stir together egg whites, bananas, sugar and oil.
- Stir flour mixture into banana mixture just until moistened.
- Spray an 8 x 4 x 2-inch loaf pan with nonstick spray coating.
- Spread batter in prepared pan.
- Bake in a 350u0b0 oven for 45 to 50 minutes or until a toothpick inserted near the center comes out clean.
- Cool bread in the pan for 10 minute.
- Remove from pan and cool thoroughly on a wire rack.
