Baked Lemon Chicken with Peppers

  1. Combine all ingredients except chicken and vegetables.
  2. Add chicken and marinate at room temperature for 1 hour, turning once.
  3. Drain and bake chicken at 400F (200C) for 35 minutes.
  4. Cut peppers into 1/2-inch thick rings.
  5. Saute 8 minutes.
  6. Spoon peppers around chicken.
  7. Makes 4 to 6 servings.
