Pear Oatmeal Muffins -- Only 4 Ww Points/Serving!
- 1 34 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 12 teaspoon salt
- 2 tablespoons pecans, chopped
- 1 12 cups oatmeal (quick cooking)
- 1 pear, cored, peeled and chopped
- 1 cup buttermilk
- 12 cup brown sugar
- 12 cup maple syrup
- 2 tablespoons vegetable oil
- 1 egg
- Preheat oven to 400 degrees F Line muffin tin with paper liners or spray with pam.
- Combine dry ingredients (flour - salt) in a bowl.
- In a small bowl combine topping ingredients (peans and 2 tablespoons oats).
- In a third bowl combine remaing oats and the remainder of the ingredients (pear - egg) -- let stand for 5 minutes.
- And then add mixture to the flour mixture, stirring until combined.
- Spoon batter into prepared cups, filling about 2/3 full and then sprinkle with topping mixture (pecan/oats).
- and bake for 15-20 minutes or until toothpick inserted in center comes clean.
- Remove and cool on rack.
