Alligator Sauce Piquant Iv Recipe
- 4 lb All-purpose flour
- 1 gal Vegetable veg. oil
- 6 lb Onions finely minced
- 4 lrg Bell peppers finely minced
- 1 bn Celery finely minced
- 1 head Garlic finely minced
- 8 c. Water
- 8 can Tomato soup
- 4 can Tomato sauce - (# 303)
- 1 c. Sugar
- 1 bot Bay leaves
- 30 lb Alligator meat minced into bite-sized pcs
- 6 bn Green onions finely minced Salt to taste Freshly-grnd black pepper to taste Cayenne pepper to taste
- First make a roux, being careful not to burn it.
- Cook till brown.
- Add in onions, peppers, celery and garlic.
- Cook 10 to 20 min.
- Add in water, tomato sauce, soup, bay leaves and sugar.
- Cook this mix for approximately 1 hour, stirring every 10 min.
- Add in meat and cook another hour.
- Add in green onions when meat is tender and cook an additional 1/2 hour.
- This recipe yields 90 to 120 servings.
