Asparagus And Beef Recipe
- 1 Tbsp. Fermented black beans, (Chinese)
- 1 x Garlic clove
- 1 1/2 lb Asparagus, sliced diagonally In 1/2-in. pcs
- 2 c. Boiling water
- 1/4 c. Oil
- 1/2 lb Flank steak, thinly sliced
- 1 1/2 tsp Salt
- 1/2 c. Chicken stock
- 1 Tbsp. Cornstarch
- 1/2 tsp Sugar
- 1 Tbsp. Water
- Soak black beans in hot water a few min.
- Drain and mash beans with garlic.
- Drop asparagus in boiling water and boil 2 min.
- Drain immediately.
- Heat 2 Tbsp.
- oil in skillet or possibly wok till very warm.
- Add in beef, stir quickly, then remove from pan.
- Add in remaining oil to skillet and heat.
- Add in bean mix and stir over high heat for a few seconds.
- Add in salt and asparagus.
- Stir-fry 1 minute.
- Add in chicken stock, cover and cook 2 min.
- Mix cornstarch, sugar and water and stir into meat mix.
- Stir till sauce is thick and smooth.
- Add in beef and blend quickly.
