Watermelon Cupcakes

  1. Heat oven to 350F.
  2. Reserve 1 Tbsp.
  3. dry gelatin mix.
  4. Prepare cake batter and bake as directed on package for 24 cupcakes, blending remaining gelatin mix into batter before spooning into prepared muffin cups.
  5. Spoon frosting into medium bowl.
  6. Add reserved gelatin mix and food coloring to frosting; mix well.
  7. Add COOL WHIP; whisk until blended.
  8. Spread onto cupcakes.
  9. Decorate with chocolate morsels to resemble watermelons as shown in photo.
