Treacle Tart

  1. Preheat the oven to 400F (200C).
  2. Mix the flour and sugar in a bowl.
  3. Add the butter and mix until the dough resembles coarse bread crumbs.
  4. Mix the egg yolk with 3 tbsp cold water.
  5. Add to the dough and stir until it comes together.
  6. On a lightly floured surface, roll the dough into a 1/8 in (3mm) circle to line the tart pan.
  7. Trim the excess and prick with a fork.
  8. Chill for 30 minutes.
  9. Line with wax paper, fill with baking beans, and bake for 10 minutes.
  10. Remove the paper and beans and bake for 5 minutes.
  11. Remove and reduce the oven temperature to 375F (190C).
  12. Warm the syrup in a saucepan with the lemon.
  13. Add the ginger.
  14. Sprinkle the bread crumbs in the tart shell, pour in the syrup, and let stand for 5 minutes.
  15. Use the dough trimmings to make a lattice top.
  16. Bake for 2030 minutes.
