Stewed Exotic Mushrooms with Gnocchi Port Wine Sauce

  1. Saute mushrooms in 1 tablespoon olive oil in large pan over high heat.
  2. Undercook slightly.
  3. Remove mushrooms from pan, lower heat and add shallot and garlic.
  4. Add port wine and reduce to half.
  5. Add strained mushroom stock and bring to boil.
  6. Add mushrooms and cream and simmer 5 to 10 minutes.
  7. Add rest of ingredients and season to taste
  8. Bring above ingredients and 2 quarts of cold water to a boil.
  9. Simmer 30 minutes.
