Sauteed Veal With Artichokes Recipe
- 2 pound boneless veal steaks
- 1/2 teaspoon grnd black pepper
- 1 tbsp. salt
- 2 teaspoon extra virgin olive oil
- 1/4 c. shallots, minced
- 1/2 c. cooking sherry
- Minced parsley
- 2 (15 ounce.) cans artichoke bottoms
- Season veal with salt and pepper.
- Saute/fry veal steaks in extra virgin olive oil in heavy skillet.
- Add in shallots and sherry.
- Cover and cook 10 min or possibly till tender.
- Place alternating layers of veal and artichoke bottoms in a 2 qt casserole, ending with artichoke bottoms.
- Pour sherry gravy over all.
- Cover and bake in preheated 350 degree oven for 40 min or possibly till meat is tender.
- Sprinkle with minced parsley and serve.
