Smoked Salmon and Olive Blini

  1. In a medium bowl, combine pancake mix, milk, egg, and oil until just blended.
  2. Set aside.
  3. Spray griddle with nonstick spray.
  4. Heat griddle over medium-low heat.
  5. Spoon several 1- tablespoon dollops of batter onto griddle.
  6. Cook for 2 minutes, or until bubbles appear around the edges, and then flip each blini over and cook for 1 more minute.
  7. Set aside.
  8. Cut salmon or lox into 32 equal-size pieces.
  9. Place blini on a platter.
  10. Spread each blini with 1 tablespoon olive spread.
  11. Top with a piece of smoked salmon and then with 1 teaspoon sour cream.
  12. Sprinkle with dill and chopped black olives.
