Hokey Pokey

  1. Prepare parchment paper or grease a foil sheet.
  2. Put sugar and syrup into a saucepan and stir together.
  3. Once its on the heat you will not be able to mix it.
  4. Place pan on heat and let it melt on low for about 4-5 minutes until its all melted and Bubbling.
  5. Remove from heat and whisk in the bicarbonate soda.
  6. Colour will turn to maple syrup colour.
  7. Turn immediately onto the prepared sheet.
  8. Leave until its set then bash it to brake it into pieces.
  9. Tip: the sugar will stick to your pan and spoons, I normally fill with water and return to the stove top and boil it, the sugar should come of much easier then making it easier to clean.
