Pork with Vegetable Rice
- 3/4 cup instant brown rice, uncooked
- 1/8 cup frozen corn
- 2 tsp. taco seasoning mix
- 1 tsp. choppedfresh cilantro
- 4 oz. pork tenderloin, cut into strips
- 1/4 tsp. canola oil
- 1/4 cup medium red pepper strips
- 1/4 cup zucchini strips
- 1/4 cup chopped onion wedges
- 1/8 cup drinking water
- 2 cup mixed salad greens
- 1/4 cup choppedchopped fresh tomato
- 1 Tbsp. KRAFT Lite House Italian Dressing
- 1 oz. KRAFT 2% Milk Shredded Cheddar Cheese
- Cook rice as directed on package, adding corn (1/8 cup = 2 Tbsp.)
- and 1 tsp.
- of the taco seasoning mix to cooking water along with rice.
- Stir in cilantro.
- Meanwhile, cook pork in hot oil in nonstick skillet on medium high heat 2 to 3 minutes or until pork is browned.
- Add remaining 1 tsp.
- taco seasoning mix, red peppers, zucchini, onions and water (1/8 cup = 2 Tbsp.)
- Cook on medium high heat 5 minutes or until vegetables are crisp-tender, stirring occasionally.
- Serve pork mixture over rice with tossed salad.
- Make tossed salad by topping mixed salad greens with chopped tomato, dressing, and cheese.
