Peach Souffle Salad Recipe

  1. Dissolve gelatin in boiling water.
  2. Add in cool water and gingerale.
  3. Gradually add in gelatin to mayonnaise, mixing till blended.
  4. Refrigeratetill partially set.
  5. Wrap a 2-inch collar of aluminum foil around top of six sherbet dishes.
  6. Beat egg white till stiff peaks form.
  7. Fold peaches and egg whites into gelatin mix.
  8. Pour gelatin mix into dishes; refrigeratetill hard.
  9. Remove collar.
  10. Garnish with peach slices and mint, if you like.
  11. Serves 6.
