Peach Souffle Salad Recipe
- 2 (3 ounce.) pkg. orange Jello
- 2 c. boiling water
- 1 c. cool water
- 1 c. gingerale
- 2/3 c. mayonnaise
- 2 egg whites
- 2 c. finely minced peaches
- Dissolve gelatin in boiling water.
- Add in cool water and gingerale.
- Gradually add in gelatin to mayonnaise, mixing till blended.
- Refrigeratetill partially set.
- Wrap a 2-inch collar of aluminum foil around top of six sherbet dishes.
- Beat egg white till stiff peaks form.
- Fold peaches and egg whites into gelatin mix.
- Pour gelatin mix into dishes; refrigeratetill hard.
- Remove collar.
- Garnish with peach slices and mint, if you like.
- Serves 6.
