Zucchini with Pumpkin Seeds

  1. Cut trimmed zucchini into matchsticks or halved thin slices.
  2. Heat olive oil and raw pepitas (pumpkin seeds) in a large skillet over medium heat; cook, stirring constantly, until seeds are toasted, 1 to 2 minutes.
  3. Add zucchini to skillet and toss with oil mixture, about 1 minute.
  4. Remove from heat; add kosher salt and freshly ground black pepper to taste.
  5. Top with shavings of cotija cheese or ricotta salata.
